The Trufrost CTSS 5 is purpose-built for a sushi counter, where the display case has to do two jobs at once: look good enough to draw customers in, and keep the sushi genuinely fresh rather than drying out under constant cold air exposure.
The curved glass gives an attractive display line, while stable humidity and temperature control is what actually protects the sushi, generic display cases dry food out because they are not tuned for this. It comes loaded with 5 GN 1/4 pans.
It runs static cooling, holding 2°C to 10°C, at a compact 1330mm width suited to a counter-length sushi bar.
